Ingredients

Main Ingredients

  • 1 block extra firm or firm tofu
  • 2 cloves garlic, minced
  • 2 stalks green onion, chopped
  • Half a cup of onion, diced
  • 4 tablespoons sesame oil
  • 1 teaspoon sesame seeds, for garnishing
  • A handful of snap peas

Marinade Sauce

  • 1 tablespoon soy sauce
  • 1 tablespoon red chilli flakes
  • Half to three-quarters of a cup of stock — chicken, beef, or vegetable all work
  • Salt to taste, optional depending on your stock

Instructions

  1. Prepare the tofu: Remove the tofu from the pack and rinse it gently. Pat it dry with a paper towel and squeeze gently to remove as much moisture as possible. Cut it into slices about a quarter of an inch thick.
  2. Fry the tofu: Preheat the sesame oil in a pan over medium-high heat. Fry the tofu slices for 5 to 7 minutes on each side until browned and crispy on the outside. Remove from the pan and set aside.
  3. Make the marinade: While the tofu is frying, combine the soy sauce, stock, red chilli flakes, and salt in a small bowl. Stir and set aside.
  4. Cook the aromatics: In the same pan used for frying the tofu, add the diced onion, minced garlic, and the white part of the green onions. Cook until the onions become caramelised and golden.
  5. Add the snap peas: Stir in the snap peas and cook for about 30 seconds to 1 minute, just enough to soften them slightly while keeping their crunch.
  6. Add the marinade: Pour in the prepared marinade sauce and leave it to come to a boil.
  7. Return the tofu: Stir in the fried tofu and leave to simmer in the sauce for a few minutes so it absorbs all the flavours.
  8. Garnish and serve: Garnish with the green parts of the green onions and the sesame seeds. Serve immediately over rice, pasta, quinoa, or couscous.
