Ingredients
Main Ingredients
- 1 block extra firm or firm tofu
- 2 cloves garlic, minced
- 2 stalks green onion, chopped
- Half a cup of onion, diced
- 4 tablespoons sesame oil
- 1 teaspoon sesame seeds, for garnishing
- A handful of snap peas
Marinade Sauce
- 1 tablespoon soy sauce
- 1 tablespoon red chilli flakes
- Half to three-quarters of a cup of stock — chicken, beef, or vegetable all work
- Salt to taste, optional depending on your stock
Instructions
- Prepare the tofu: Remove the tofu from the pack and rinse it gently. Pat it dry with a paper towel and squeeze gently to remove as much moisture as possible. Cut it into slices about a quarter of an inch thick.
- Fry the tofu: Preheat the sesame oil in a pan over medium-high heat. Fry the tofu slices for 5 to 7 minutes on each side until browned and crispy on the outside. Remove from the pan and set aside.
- Make the marinade: While the tofu is frying, combine the soy sauce, stock, red chilli flakes, and salt in a small bowl. Stir and set aside.
- Cook the aromatics: In the same pan used for frying the tofu, add the diced onion, minced garlic, and the white part of the green onions. Cook until the onions become caramelised and golden.
- Add the snap peas: Stir in the snap peas and cook for about 30 seconds to 1 minute, just enough to soften them slightly while keeping their crunch.
- Add the marinade: Pour in the prepared marinade sauce and leave it to come to a boil.
- Return the tofu: Stir in the fried tofu and leave to simmer in the sauce for a few minutes so it absorbs all the flavours.
- Garnish and serve: Garnish with the green parts of the green onions and the sesame seeds. Serve immediately over rice, pasta, quinoa, or couscous.
